Chimichurri

a vibrant, uncooked herb sauce or marinade commonly used as a table condiment for grilled meats; it tastes bright, tangy, and intensely herbaceous
Ingredients:
- 1/2 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon red pepper flakes
- 1-3 cloves garlic
- 2 tablespoons fresh oregano or marjoram
- 1 cup loosely packed fresh cilantro
- 1 cup loosely packed fresh flat leaf parsley
- 1/4 teaspoon smoked paprika (optional)
Instructions:
- Place all ingredients in a blender and blend until herbs are finely chopped and mixed.
- Let rest in the fridge for at least 4 hours to let flavors blend.
