Chimichurri

a vibrant, uncooked herb sauce or marinade commonly used as a table condiment for grilled meats; it tastes bright, tangy, and intensely herbaceous

Ingredients:
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 1-3 cloves garlic
  • 2 tablespoons fresh oregano or marjoram
  • 1 cup loosely packed fresh cilantro
  • 1 cup loosely packed fresh flat leaf parsley
  • 1/4 teaspoon smoked paprika (optional)
Instructions:
  1. Place all ingredients in a blender and blend until herbs are finely chopped and mixed.
  2. Let rest in the fridge for at least 4 hours to let flavors blend.
